5 large potatoes, peeled and quartered
1/2 c. (4 oz.) sour cream
4 oz. cream cheese, softened
3 tbsp. margarine, divided
salt & pepper to taste

Directions:
Directions:
Boil potatoes in water until tender. Drain water. Beat potatoes with sour cream, cream cheese, 2 tbsp. butter and salt and pepper. Pour into greased casserole dish. Dot with remaining butter. Refrigerate or bake immediately, covered at 350 for 40 minutes. Uncover and bake for 20 mintues longer. If potatoes are made ahead and refrigerated, let stand at room temperature for 30 minutes before baking. Can be used anytime within 2 weeks.
