2 T. red curry paste (Lee Kum Kee's Chili Garlic Sauce)
1 can coconut milk
3 - 4 cups uncooked diced chicken
1 tsp. soy sauce
1 T. sugar
1 tsp. salt
1/2 cup fresh cilantro

Directions:
Directions:
Mix curry paste and 1/4 can coconut milk on medium heat. Add chicken and stir in rest of milk. Add soy sauce, sugar and salt. Simmer on high until chicken is cooked. Add cilantro and serve over rice.
