1 egg white
1 cup chopped red onion
3/4 cup chopped mint
1/2 cup dry bread crumbs
1/3 cup (1 1/2 0z.) feta cheese
2 T. fresh lemon juice
1 tsp. dried dill
1 lb. ground turkey
4 hamburger buns
1 (7 oz.) bottle roasted red peppers, 1 inch strips

Directions:
Directions:
1. Place egg white in large bowl and lightly beat with whisk. Add onion, mint, bread crumbs, cheese, lemon juice, dill, and turkey. Stir well. Divide turkey mixture into four equal portions shaping into 1/2 inch patty.
2. Heat skillet to medium heat. Cook 8 minutes each side or until done.
3. Place burgers on buns with red peppers on top.

This recipe was taken from the Cooking Light magazine. I always use more feta cheese than what it calls for. Cheese makes everything better!
