Directions:
Directions:
Cook potatos with skins on til tender in small amount of water. Add some salt. When tender, remove and peel potatoes, dice when cool enough to handle. Add hard boiled eggs, diced, in a ratio of about 3-4 potatoes to one egg. Mix some diced celery, pickle or picle relish into it. Add mayonaise, about 1 tbsp. mustard and mix well. Make the salad quite moist, because as it sets, it gets more solid. If you care for onion, may use these. I don't like it after it sets myself, but a lot of people do.

This was in my big blue jar and I am glad it was. Jeff always loved this salad. " It's good, I miss it " are his very words to me as I type this in.

Generally you can count on one to one and a half potatos for each person being served. That means with this recipe you can make it for as few or many as you like. When it comes to the other ingriedients eyeball it to your own taste. Jeff thinks that surely there was salt and pepper added as well.
