"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

families or individuals create heirloom cookbook treasures.
½ c butter ½ c vegetable oil 1¾ c sugar 2 eggs 2 c grated zucchini 1 Tbsp vanilla 2 c flour ½ c buttermilk 5 Tbsp unsweeten cocoa ½ tsp cinnamon 1 tsp salt 1 tsp baking soda 1 tsp baking powder
Combine all ingredients in order. Mix well and pour in greased 9"x13" pan. Bake at 350º for 40 -45 minutes. Cool and frost with chocolate frosting.
When we lived in Logan, there was always a surplus of zucchini in the fall. I was always on the hunt for something to do with it all. What could be better than a fabulous chocolate cake. We couldn't let those zucchinis go to waste so we ate a lot of chocolate cake, darn!
