1/4 c. - evaporated milk
3 T - dijon mustard
1/4 c. - fine dry bread crumbs
1/4 c. - grated parmesan cheese
4 (about 1 lb) - boneless, skinless chicken breasts halves

Preheat oven to 475
- spray 9x13 inch baking dish with cooking spray
- combine evaporated milk and mustard in a shallow bowl
- combine bread crumbs and cheese in a seperate bowl
- dip chicken into milk mixture, coating both sides; then into bread crumb mixture
- place in prepared dish
- bake for 15-20 minutes or until chicken is golden brown and no longer pink in center
