4 sweet red peppers
1 small onion diced
1-1/2 cups cooked ground beef
1/3 cup dry bread crumbs
1 egg, slightly beaten
1/2 tsp. salt.
2 tsp. parsley chopped, tomato juice, chicken broth.

Directions:
Directions:
Cut and slice from the stem end of each pepper, remove the seeds and white fiber. Cook the pepper in boiling water low for about 6 min., drain. Cook the chopped onion in a little olive oil, until yellow; remove from the stove add the meat ,bread crumbs,egg,salt,parsley. Add a little chicken broth to moisten. Fill the peppers with the mixture. Arrange the peppers in a baking dish. Pour a little tomato juice to cover the bottom of the pan. The tops may be covered with buttered bread crumbs.
Bake in a 375 oven for about 30 in.

Whole peppers will stand erect if a thin slice is cut from the rounded base of the lobes.
