3 pounds of zalodek
Water
Grated horseradish root

Directions:
Directions:
Cover zalodek with water. Bring to a boil. Reduce heat and simmer covered 45-60 minutes, occasionally pricking with a fork to release excess fat. Drain sausage. Prick any air bubbles it may contain. Place between 2 sheets of waxed paper. Cover with a board, then place a heavy weight on top of the board. Let stand one hour. Serve cold. Slice and serve with grated horseradish root.

Zalodek is a large Slovenian smoked sausage. Dad always had these at Eastertime with fresh horseradish root.
