Salt, To Taste
Pepper, To Taste
1 Onion, Sliced
Garlic, To Taste
Browned Flour


Directions:
Directions:
Cover hocks in water and simmer covered until tender. Thicken liquid with browned flower.

Browned Flour:
Spread 1/2 to 1 cup flour in heavy fry pan. Brown over low heat until light brown. Stir constantly to avoid burning. Remove from heat and add liquid to make paste. Add paste to liquid in the hocks. Serve with mashed potatoes.
