6 skinless boneless chicken breasts, halved
1/2 c. chopped onion
2 garlic cloves, minced
1/2 tsp. dried crushed red pepper
1/4 c. ground dry-roasted peanuts
1 tsp. dried cilantro leaves
1 tsp. sugar
1 tsp. salt
2 tsp. grated lemon rind
1 T. margarine
1 T. cornstarch
1 T. soy sauce
1 1/2 c. chicken broth
1 1/2 c. cream of coconut

Directions:
Directions:
Stir onion, garlic, crushed red pepper, peanuts, cilantro leaves, sugar, salt, lemon rind.
Reserve 2 T. of mixture.
Dredge chicken breasts in remaining mixture.
Melt margarine in a large skillet over medium-heat.
Add chicken and cook 5 minutes on each side.
In a medium bowl whisk together the corn starch and soy sauce.
Stir in chicken broth, cream of coconut and reserved onion mix.
Pour over chicken and simmer for 20 minutes.
