2 cups sugar
2 cups flour
2 tsp. baking soda
2 tsp. cinnamon
4 eggs, beaten
1 cup oil
2 tsp. vanilla
2 cups grated carrots
1/2 cup nuts (optional)

Icing

2 cups powdered sugar
1/4 cup spft butter
1-4oz pkg cream cheese
1 tsp. vanilla
2-3 tbsp. milk

Directions:

Cake
Put dry ingredients in bowl, make well in center and add all wet ingredients and carrots. Mix well. Pour into 9 x 13 pan and bake in 350 oven for approx. 45 minutes or until done.
Icing
Mix wel with mixer until smooth and creamy. Spread on cake and now ...HORK OUT
