1 can of tomatoes (you can use fresh tomatoes if you have them)
Olive oil (I use garlic flavored)
Fresh herbs: chives, Italian parsley, sweet basil, Greek oregano (can use dried herbs if necessary)
Red wine
Salt and ground black pepper

Directions:
Directions:
Put the tomatoes in food processor or blender and add remainder of ingredients. Simmer for about 1/2 to 1 hour over low heat. Best if made ahead and left to cool for a few hours to let the flavors mingle. Serve over any kind of pasta. Also good served over sauteed chicken. Sprinkle with grated parmesan cheese.
