1 cup diced onion
1/2 lb. sliced mushrooms
5 slices bacon, finely diced
2 T. butter
2 lbs. fresh spinach, washed and chopped
1 can cream of mushroom soup
1/2 lb. diced Swiss cheese
juice of one lemon
1/2 cup crushed crackers

Directions:
Directions:
Preheat oven to 350. Melt butter in skillet and saute onion and mushrooms with bacon for about 2 minutes. Add spinach a little at a time and cook over medium heat several minutes until spinach melts. Mix spinach mixture with mushroom soup, Swiss cheese and lemon juice and pour into greased casserole. Sprinkle crushed crackers over the top and bake 1 hour.
