8-10 potatoes, peeled and boiled

1 c. sour cream

1 tsp. garlic salt

8 oz. pkg. cream cheese

1 tsp. onion salt

onion, to taste, diced very small

Directions:

Mash potatoes and add milk as usual, but leaving a little stiffer.

Add the rest of the ingredients and mix with mixer until well mixed.

Dump the mixture into a buttered casserole dish.

Sprinkle with paprika, if desired.

Bake, uncovered. at 325 for 1/2 hour or until warmed through.

It will puff while heating. Add butter before serving, if desired.

A little longer than time to boil potatoes---bakes for 1/2 hours approx.

This is a favorite in our family---partly because of the taste, but partly because it can be made ahead of time and baked the next day.

I also often make it ahead and freeze before baking or divide it and bake and serve half of it, and freeze the other half, unbaked. In this case, it will seem "milky" when you look at it, but after stirring, it will be fine. I have frozen leftovers before too.

Yum!

You can adjust the amount of seasonings to your taste. It would be possible to leave the peelings on before boiling, if you prefer.

Great for company, or "just us"!
