1 baked pie shell
3 pints strawberries
1 tsp lemon juice
3 Tbsp cornstarch
1 c sugar
1 c whipping cream
2 Tbsp powdered sugar
tsp vanilla

Directions:
Directions:
Mash and boil 1 pint of berries (@ 1 c) with 1 c water. Cook 2 minutes. Pour berry juice through a sieve to strain out seeds. Pour juice over cornstarch and sugar. Add lemon juice. Heat until thick, then cool to lukewarm. Slice and arrange remaining berries in pie shell. Pour glaze over berries and chill. Whip cream with powdered sugar and vanilla until soft peaks form. Top pie with cream and serve.
