3 c. cooked rice
2 c. cooked ham, pork, or chicken
1/2- 1 c. chopped onion
3 eggs, beaten
3 tbsp. soy sauce
1/4 c. oil
16 oz. frozen mixed vegetables (thawed)

Directions:
Directions:
Fry meat and onion in oil until heated; push to side of pan. Add beaten eggs and scramble. Add cold rice and vegetables and cook until heated, turning with a pancake turner to avoil burning. Add soy sauce; use more if needed.
