1 - 3 oz. package ladyfingers, split lengthwise

4 c. low fat ricotta cheese

1 - 8 oz. pkg. light cream cheese, softened

1 c confectioner’s sugar

5 t. instant espresso powder

2 t. vanilla extract

4 t. unsweetened chocolate powder

Instant sweetened whipped cream

2 t. grated lemon zest

Directions:
Directions:
Line bottom and side of a 9" spring form pan with ladyfingers. In large bowl, combine ricotta cheese, cream cheese, confectioners" sugar, espresso powder. Beat at medium speed with electric mixer until well blended. Carefully spoon mixture into a prepared pan. Refrigerate at least 3 hours or overnight.

To serve, dust top with remaining 1 t. cocoa powder. Garnish with whipped cream and lemon zest.
