20 ounce can of crushed pineapple
2 cups of all purpose flour
2 cup of granulated sugar
1 cup of brown sugar
2 teaspoons of baking soda
1 cup chopped walnuts

Directions:
Directions:
In a large mixing bowl beat 2 eggs until they're light and fluffy. Add the contents of a 20 ounce can of crushed pineapple (undrained), 2 cups of all purpose flour, 2 cup of granulated sugar, 1 cup of brown sugar, and 2 teaspoons of baking soda. Mix these ingredients well by hand. (If you use an electric mixer, too much air gets beating in, and there's a very good chance that the cake will fall.) Then stir in 1 cup chopped walnuts, and spread the contents of a bowl evenly in an ungreased 13x9x2 inch baking pan. Bake in a 350 oven for 45-50 minutes, or until a toothpick insured in the middle comes out clean. After the cake cools, cover it with Cream Cheese Ginger Frosting, then sprinkle some additional walnuts on top.


Cream Cheese Ginger Frosting:


In a small mixer bowl beat together a 3-ounce package of cream cheese (softened), cup of butter or margarine and 1 teaspoon of vanilla. (This time you can use the electric mixer; it's easier.) Then gradually add 2 cups of powdered sugar and teaspoon of ground ginger, and continue beating until the frosting has a nice, smooth consistency.
