1 large chicken breast, cut up into bite-size pieces
1-1/2 large onion, diced
3 stalks of celery, finely diced
1 green onion, thinly sliced
3 carrots, sliced
1 cube chicken seasoning (bouillon)
1/2 tbsp. seasoning salt
1/2 tbsp. pepper
1 tbsp. basil
1/4 tsp. celery seed or sprinkle to taste
6-8 cups water
2 c fideo pasta, cut up

Directions:

Brown chicken in large pot. Add onion, celery green onion and carrots. Add 3 to 4 cups water, bring to a boil. Lower heat to medium. Add the seasonings then cook for about 45-60 nminutes. Test the meat and veggies for tenderness.

Add the additional 1-2 cups of water as needed. The soup should be of thick consistency.
