Ingredients:
4 medium sweet potatoes or yams
4 tablespoons butter or margarine
1/3 cup (packed) dark brown sugar
1 T of drained crushed pineapple

Directions:
Directions:
Peel the potatoes and cut into thirds or quarters, depending on the size of the potato. Boil until just tender; drain. Do Not Overcook or they will break apart. Melt the butter and sugar in a pot, stirring occasionally. Stir in the pineapple. Put the potatoes in a buttered baking dish, spoon the butter -sugar mixture on top, cover lightly with foil, and bake in a preheated 350 oven for 45 minutes to 1 hour. I usually uncover for the last 10 minutes.

Personal Notes:
I like to make candied sweet potatoes for Thanksgiving dinner and will adjust the recipe accordingly as I increase the number of potatoes for more servings. Can omit the pineapple if you prefer.
