3 beaten eggs 1.5 c. milk .3 c. sugar 1 tsp. vanilla 1 c. cooked rice Grouned nutmeg or cinnamon
Combine eggs, sugar, milk and vanilla in a bowl. Beat until combined but not foamy. Stir in rice. Pour egg mixture into a 1.5 quart casserole. Sprinkle with nutmeg. Place dish in a 2 quart square baking dish on an oven rack. Pour boiling water into baking dish around the casserole about one inch deep. Bake at 325º for 50 minutes. Serve warm or cold.
