2 cups shell macaroni
2-3 large stalks broccoli (1-1/4 lbs.)
1 large can tuna with oil
2 tomatoes
2 tsp. chopped fresh basil
2 tsp. fresh oregano or 2/3 tsp. dried oregano
4 Tbs. chopped red onion
5 Tbs. olive oil or saffola (not necessary if you use the tuna with oil)
4 Tbs. red wine vinegar
salt and pepper to taste

Cook pasta (but do not overcook!). Steam broccoli. Mix all the vegetables and spices and then stir in tuna and macaroni and mix well. Serve hot! It's great! Serve with french rolls or sourdough rolls cut in half and spread with melted monterrey jack cheese, garlic and 4 Tbs. minced fresh parsley.
