1-1/2 cups sugar (a little more)
1-1/4 cups cooking oil
4 eggs
2 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg (optional)

Directions:
Directions:
Mix sugar, eggs and oil. Add to dry ingredients 3 cups grated carrots and 1 cup chopped nuts. You may also add raisins, too! Pour in lightly greased 13x9 pan. Bake at 325 for one hour.

Frosting: Philadelphia cream cheese, powdered sugar and evaporated milk. Sprinkle top with grated carrots.
