2 Boxes fat free beef broth
10 cloves of garlic, pressed
2 leeks chopped
1 can peas drained
1 large can diced tomatoes with juice
1 can kidney beans, drained
1 can green beans, drained
bag baby spinach
1 pt sliced fresh mushrooms
5 red potatoes, chopped with peels
1 tsp rosemary
1 tsp thyme
1 tsp basil
1 tsp olive oil
red wine to taste (about 1 cup)
salt and pepper to taste

Directions:
Directions:
Combine all ingredients in a large stock pot. Cook until potatoes are tender. Thicken with cornstarch slurry, made with either red wine or water and about 3 tbsp of cornstarch.
