Two whole boneless, skinless chicken breasts cut in half, or four half breasts
Juice of 3-4 fresh lemons (enough to get 1/3 cup of juice)
1/3 cup olive oil
1 tsp. lemon zest
1 tsp. pepper
1/2 tsp. salt
Pinch of sugar
(Capers - optional - to use after the chicken is cooked)

Directions:
Directions:
Combine all of the ingredients in a bowl. Put the chicken breasts in a glass baking dish. Pour the mixture over the chicken breasts, and marinade in the refigerator for 2 to 3 hours. Bring glass dish to room temperature. Bake at 375 for 35-40 minutes. Optional: sprinkle capers over the chicken before serving.
