1 tbsp. flour
1 egg
1/2 c. sugar
2 tbsp. apple cider vinegar
1 can, 8 oz., crushed pineapple - drained - reserve juice
4 c. red delicious Apples, unpeeled * diced
1 c. salted shelled peanuts
1 8 oz. carton non-dairy topping - cool whip
additional peanuts for garnish, optional

Directions:
Directions:
Combine flour and sugar; mix well. Beat egg; add to flour/sugar. Add vinegar and reserved pineapple juice. Cook in small pan on low heat. Stir and cook until thick. Cool completely. Pour cooled dressing over pineapple, apples, and peanuts. Mix in non-dairy topping. Sprinkle with additional peanuts over top for garnish if desired.
