Jelly Doughnut Muffins Recipe

1 3/4 c. flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp cinnamon
3/4 c. sugar
1/3 c. vegetable oil
1 egg lightly beaten (1/4 c. egg substitute)
3/4 c. milk
1/4 c. jam or jelly


1/4 c. butter - melted
1 tsp cinnamon
1/3 c. sugar

Combine flour, baking powder, salt, nutmeg and cinnamon in a large bowl. Combine sugar, vegetable oil, egg and milk in another bowl and stir into dry ingredients. Line muffin tins with paper cups and fill each cup halfway with batter. Place 1 tsp of jam or jelly on top of each and cover with remaining batter. Bake at 350F for 20 minutes. While the muffins are baking, combine melted butter cinnamon and sugar. Dip each baked muffin in topping before serving.
