1 c flour
½ tsp salt
1/3 c shortening
½ c grated cheddar cheese
3 - 4 Tbsp ice water

½ c sugar
¼ c flour
¼ tsp cinnamon
5½ c sliced pears
2 tsp lemon juice

½ c flour
¾ c brown sugar
1/3 c softened butter

Cut flour and salt into shortening with a pastry blender. Add cheese and mix in enough water to make dough manageable. Roll out and line pie pan. Combine filling and toss together and pour into pie crust. Make topping by cutting flour and sugar into butter to form crumbs. Sprinkle over pears and bake pie at 375° for 1 hour.
