2 cups carrots, cooked and mashed - can use 2 cans of carrots or 2 cups sweet potatoes, cooked and mashed

1 cup sugar
3 Tbsp flour
1 tsp baking powder
1/2 cup butter, melted
3 eggs, beaten
1 tsp cinnamon

Directions:
Directions:
Salt carrots (or sweet potatoes) and cook until tender. Drain and mash. Set aside. Mix together sugar, flour, and baking powder. Add butter, eggs, cinnamon and carrots (or potatoes.) Mix well. Bake in 9 x 5 x 3" loaf pan at 400 for 14 minutes. Reduce heat to 350 and bake 45 minutes more.
