1 - 2 # shredded hashbrowns
1/2 C. oleo, melted
1 tsp. salt
1/2 tsp. pepper
1 can cream of chicken soup
1 C. sour cream
2 C. grated cheese
1/4 C. minced onion

Topping (optional)
2 C. corn flakes
1/4 C. oleo

Directions:
Directions:
Mix all ingredients together and place in a casserole dish that has been sprayed with Pam.
If desired, mix corn flakes with melted oleo and sprinkle on top of the other ingredients in pan.
Bake at 350 for app. 45 minutes.

My family loves this hashbrown casserole. I mix it up the night before and put in the refrigerator. I pop it in the oven the next morning and let it bake. I usually serve this with my breakfast casserole for our Christmas morning breakfast (brunch). This recipe can be served at any meal, we just prefer it at breakfast.
