1 c diced celery
1 onion, chopped
1-2 c sliced, fresh mushrooms
1/3 c butter or margarine
╝ tsp thyme
1/8 tsp pepper
2 tsp lemon zest
╝ c lemon juice
3 c cooked rice

Directions:
Directions:
SautÚ vegetables in butter. Add seasoning and lemon juice and zest. Mix well and add rice.

This stuffing is great for stuffing fish. Will stuff an 8 lb fish. Wrap ends of fish with foil to prevent stuffing from spilling out, and place fish in a well-greased baking dish. Bake stuffed fish at 350░ for 1 hour or until fish flakes.
