1 lb Italian or Kielbasa sausage 3 medium green peppers 1 large can pineapple tidbits (reserve juice)
Cut sausage in bite size pieces and brown slowly in fry pan. Add pineapple and green pepper and cook until pepper is tender crisp. Add about 1 Tbsp cornstarch to pineapple juice and mix well. Add mixture to sausage and cook until thickened. Serve over rice.
