Black Bean Mango Salsa Recipe

4 c. mangoes (1" cubes)
2 c. rinsed canned black beans
3 c. corn
1 1/2 c. red onion
6 T fresh lime juice
2 t. sugar
cilantro may be added

2 t. chopped garlic
2 T Dijon mustard
1/2 t. salt
1/4 t. ground pepper
1/4 c. red or white vinegar
1 c. extra virgin olive oil

Mix Salsa ingredients in large bowl. Shake vinaigrette together and add to salsa.
