8 medium potatoes
2 celery stocks, chopped
1 large onion, chopped
1 c. water
2/3 c. cider vinegar
1/3 c. sugar
2 T. tapioca
1 tsp. salt
3/4 tsp. celery seed
1/4 tsp. pepper
6 bacon strips, cooked and crumbled
1/4 c. minced fresh parsley

Directions:

Peel potatoes and cut into 1/4-inch strips. In a crock pot combine potatoes, celery, and onion. In a bowl, combine water, vinegar, sugar, tapioca, salt, celery seed, and pepper. Pour over potatoes and stir gently to coat. Cover and cook for 4 to 5 hours on high heat, or until potatoes are tender. Sprinkle bacon and parsley over potatoes before serving.
