2 tbl. olive oil
4 - 1-1/2 inch thick pork chops
1/2 tbl. paprika
1/4 lb. chorizo - casing removed, finely chopped
1 small onion
1 tbl. thyme
1 - 16 oz. jar roasted red peppers
1/4 c. white wine
parsley

Directions:
Heat a large skillet over medium heat - add the olive oil. Season the pork chops with salt and pepper and paprika and place the chops in the pan and sear the meat to caramelize (about 2 minutes) transfer chops to a rimmed cookie sheet and place in the oven to finish off - 8 to 10 minutes in a 375 oven -

While chops are in the oven, return skillet to the stove - add the diced chorizo and cook through completely. Add the onions, thyme, salt and pepper - cook the chorizo and onions for 2 minutes more.

Process the roasted peppers and parsley in a food processor until smooth. Add the wine to the chorizo and onion and stir, then pour into the roasted pepper puree. Cook for another minute or 2 until the pepper puree is heated through.

Place a chop on each plate and top with the chorizo and roasted red pepper sauce.
