For the Cream Puffs:
1 c. boiling water
1/2 c. butter
1 c. flour
4 eggs

Place butter and boiling water in a sauce pan and heat until the liquid boils vigorously. Add the flour all at once, and beat quickly and thoroughly. When the mixture forms into a very thick ball of paste, remove from heat and cool for a few minutes. Add the unbeaten eggs one at a time, beating each egg into the dough. Drop on a buttered cookie sheet by spoonfuls
Bake 10 minutes at 400 degrees and then drop the temperature to 350 degrees and bake for 20 minutes more -
DO NOT OPEN THE OVEN - NOT EVEN A LITTLE BIT!!!
When cream puffs and golden brown and well puffed, remove them from the oven - make a small cut in the side of each puff and cool completely.

FOR THE CREAM FILLING:
3/4 c. sugar
1/3 c. flour
1/8 tsp. salt
2 c. scalded milk
1 tsp. vanilla
2 eggs

Mix the sugar, flour and salt together - Add the scalded milk gradually
In a double boiler, cook, stirring constantly until the mixture thickens and then boil for 15 minutes.
Beat eggs. Add thickened mixture to the eggs - return to double boiler and cook for 2 minutes stirring constantly - Cool

The cream can be flavored with whatever flavoring you wish -

Slice open the cream puffs and fill with the cream filling - top with chocolate sauce and whipped cream.
