3/4 lb. chicken filets, cut in strips
1 bunch broccoli, cut in flowerets
1 small carrot, thinly sliced on an angle
1 package white mushrooms, sliced
1 onion
1 lb. mushrooms
1 green pepper
1 red pepper thinly sliced
2 tbsp.olive oil

Marinade: 1/4 c soy sauce, 1/8 c water, 1/4 c olive oil, 1 tsp. sugar, 1/2 juice of a lemon, a slice of fresh ginger, or 1/4 t ginger. Mix together.

Marinate chicken for at least an hour.
Heat oil in wok. Stir-fry meat for 3-5 minutes. Remove from wok and cover. Add marinade to wok and bring to a boil. Stir-fry vegetables in marinade for 5-6 minutes. Add meat and stir fry for another minute. Serve over rice and Chinese noodles.

You can substitute shrimp, scallops, or beef or pork for the chicken. Or leave out the meat and this can be a vegetarian dish.
