4 large sweet potato
2/3 cup packed brown sugar
1 teaspoon grated orange rind
4 to 6 tablespoons orange juice
8 large marshmallows
2 cups flaked coconut, toasted

Directions:
Directions:
Wash potatoes. Cover with water. Bring to boil; reduce heat and simmer til tender, 25-30 minutes. Cool, peel and mash. Measure 4 cups.

Stir in brown sugar, orange rind and juice, mixing well. Shape 1/2 cup potato mixture around each marshmallow; roll in coconut.

Place balls in a 13x9 dish and bake at 350 F for 15 to 20 minutes.

Note: Potato balls may be frozen, unbaked, if desired. Thaw before baking.
