Wild Rice with Cherries Recipe

1/2 cup dried cherries
1/2 cup dry red wine
1 cup raw wild rice
3 cups chicken stock
1/4 cup chopped scallions
1/2 cup chopped pecans
3 tablespoons Balsamic vinegar
1/2 teaspoon dijon mustard
1/4 cup extra virgin olive oil
Salt and pepper to taste

Soak cherries in the red wine for 2-3 hours.

Cook rice and chicken stock for 45 minutes or until
most of the liquid is gone.

Drain both and combine.

Add chopped scallions and pecans.

Combine Balsamic, dijon and olive oil. Pour over rice mixture. Salt and pepper to taste.

I usually double this recipe. It is a pretty side dish and goes well with pork and chicken.
