3 cups flour
2 tsp cinnamon
2 tsp baking soda
1 tsp salt (optional)
1 cup chopped nuts (walnuts, toasted almonds, pecans, you
choose)
1 1/2 cups sugar
3 eggs
1 cup vegetable oil
2 tsp vanilla
2 cups grated zucchini

Directions:

Preheat oven to 350 F. Stir dry ingredients together.
Add the remaining ingredients and blend well. Pour
batter into 2 well greased bread pans (or a square
cake pan). Bake for one hour.

My mom used to make this for us when we
were kids. It's pretty sweet, so if you want you can reduce
the sugar to one cup. Toast it the morning after you make
it and spread on some cream cheese. Mmmmmmm.
