1 box Uncle Benís long grain and wild rice mix
1-pint sour cream to taste-possibly 1cup only
1/4 lb fresh mushrooms, sliced
1 sm can diced Ortega green chilies
2 tbsp butter
Monterey jack cheese, shredded

Directions:
Directions:
Cook rice according to package directions. Sautť mushrooms lightly in butter - salt to taste. In a casserole dish layer the ingredients, and cover; bake at 350 degrees until heated through and cheese is melted about 30 minutes. For large crowds always double it and add diced cooked beef to make it heartier. It is nice as a side dish or as a main meal when the meat is added.
