1/4 cup fresh lime juice
1/4 cup reduced-sodium soy sauce
2 tbsp. olive oil
4 boneless chicken breasts, cut into thin strips
1 medium onion, cut into thin wedges
1 medium green pepper, seeded and cut into thin strips
1 large tomato, cut into thin strips
Flour tortillas,salsa, sour cream, grated cheddar cheese and guacamole, to serve

Directions:

Prepare marinade by combining lime juice, soy sauce and olive oil. Pour 2/3 of the marinade over chicken and marinate in the refrigerator 1-2 hours, turning once or twice.

Grill chicken until cooked thoroughly.

Meanwhile, in a wok or heavy skillet, heat remaining 1/3 marinade. Add onion and stir-fry 2-3 minutes. Add peppers and stir-fry 2-3 minutes. Toss with chicken and tomatoes, and serve immediately. Serve with warm tortillas, salsa and other condiments.

This is easy and delicious. This fajita marinade also works great with steak (ideally thinly sliced flank steak or skirt steak) and shrimp. I've even cooked all three for a fajita combination meal worthy of any good Mexican restaurant!
