2 c. cooked chicken, cut fine
2 egg yolks - reserve whites
1 1/2 c. white sauce (very thick white sauce must be used)
flour
crumbs

Directions:
Directions:
Add yolks to white sauce, stirring constantly. Add chicken. Mold into croquettes. Dip in flour and then in beaten egg white, then in crumbs. Chill and fry in fresh deep fat until golden but not brown.
