"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
6 lbs. spare ribs
salt, pepper and garlic salt
1/2 c. apple jelly
1/4 c. soy sauce
1/4 c. vinegar
2 c. tomato juice
3 small onions sliced

Directions:
Directions:
Separate ribs, sprinkle with salt, pepper and garlic salt. Roast in shallow pan in preheated 350 oven for 1 hour. Combine remaining ingredients. Pour over ribs, cover and continue roasting 1 hr or more.
If the pork is fat, I usually pour all the grease off after the first hour then add the other ingredients. There is still plenty of fat in the meat to make good gravy.
