1 c. butter softened
1-1/2 c. sugar
2 eggs
2 tsp. cream of tartar
1 tsp. baking soda
1 tsp. vanilla
1/4 tsp. salt
2-3/4 c. flour
1/4 - 1/2 c. sugar

Preheat oven to 375.

In a large mixing bowl beat the butter with an electric mixer on medium speed for 30 seconds. Add the 1-1/2 c. sugar, beat until combined. Beat in eggs, cream of tartar, baking soda, vanilla and salt until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stri in any remaining flour.

Cover and chill for 2 to 3 hours.

Shape dough into 1 inch balls and roll them in the remianing sugar. Place balls 2 inches apart on an ungreased cookie sheet.

Bake for 7 to 8 minutes or until lightly browned. Cool for 2 minutes on cookie sheet then transfer to wire rack.
