1 1/2 lbs. beef, cubed
1 lb. mushrooms, sliced
1/2 c. black olives, sliced
1 large onion, diced
2 c. beef broth, or bouillion
1 c. sour cream
1 tsp. dried thyme
1 bay leaf
salt and pepper
1 lb. egg noodles, cooked

Directions:
Directions:
In a large skillet, brown beef and onion in about 1 T. oil. Add broth and seasoning and cover. Simmer for about 20 minutes or until beef is tender. Uncover and cook down until only 1-2 T. of liquid remains in pan. Add mushrooms and olives, cook until mushrooms are tender and liquid is minimal in pan. Remove from heat and stir in sour cream. Check seasoning and remove bay leaf. Serve over warm egg noodles.
