4 boneless, skinless chicken breasts, slightly pounded
1 c. Italian flavored bread crumbs
1/4 c. parmesan cheese, plus more for topping
1 egg, diluted with 1 T. of water
8 ozs. mozzarella, sliced, or you can use shredded
1 jar prepared spaghetti sauce
salt & pepper

Preheat oven to 350F. Pound chicken breast until thicker parts of breast are even with thinner parts. Season with salt and pepper on both sides. Heat over medium heat about 1/2-inch oil in a large saute pan. Put the egg in a bowl and dilute with a bit of water and beat together. Combine the bread crumbs and parmesan cheese on a plate or pie dish. Dip the chicken into the egg mixture, let the excess drip back into the bowl, then coat evenly with bread crumb mixture. Saute chicken on both sides until golden brown. Drain on a paper towel. Spoon about 1/2 c. sauce in a 13X9-inch baking dish and spread evenly. Place the chicken in the dish and top with more sauce then add a few more dashes of parmesan and the slices of cheese. Bake for 15-20 minutes or until juices run clear. Serve with spaghetti and remaining sauce.

This is one of Dan's favorites. Sometimes I use chicken tenders instead of chicken breasts. Then I don't have to pound it out and it cooks a little faster.
