Heat oven to 450F. Beat cream cheese and sugar in a large mixing bowl with an electric mixer. Add eggs and vanilla and mix well. Stir in 1 2/3 c. chocolate chips and pour into crust. Bake for 10 minutes, don't open oven door! Reduce temperature to 250F and continue baking for 30 minutes or until set. Remove from oven and cool on a wire rack. Cool completely and then thoroughly chill in refrigerator, at least 3 hours. In a microwave-safe bowl, combine 1/3 c. chocolate chips and whipping cream. Microwave on high for 20-30 seconds or until chips are just melted and mixture is smooth when stirred. Cool slightly and spread over cheesepie. Personal Notes:
If you can't find a large graham cracker crust pie shell, you can make one yourself. Just take a large, deep-dish pie plate, 2 c. graham cracker crumbs, 4 T. melted butter, 1/4 tsp. cinnamon, 1/8 tsp. salt. Combine everything in a mixing bowl and press into pie plate. Put into freezer for 10 minutes or while making the pie filling then continue as recipe states.
