12 small new potatoes or any small potato
4 tsps. butter
2 tsps. fresh parsley, minced
2 tsps. fresh chives, minced

Directions:
Directions:
Peel 1/2-inch strip around the center of each potato. Place potatoes in a saucepan with cold water, making sure water level is 2-inches above potatoes. Bring to a boil then reduce heat and simmer potatoes until tender, about 20 minutes. Don't overcook, they get mushy. Drain well and return to hot pan. Mix together melted butter and herbs. Pour over potatoes and mix thoroughly until well coated.
