2 cans (14 ozs. each) chicken broth
5 large russet or yukon gold potatoes
1/2 c. light cream or sour cream
2 T. butter or margarine
salt and pepper

Directions:
Directions:
Peel and cut potatoes into 1-inch pieces. In a large saucepan, add potatoes and cold broth. Heat to a boil and turn down to a simmer. Cook potatoes until tender, about 10 minutes. Drain, reserving broth. Mash potatoes with an electric mixer, adding 1/4 c. broth, cream, butter, and salt & pepper. Add more broth to reach your desired consistency.
